1. Shade & Terroir

Our beans are grown in the high-altitude shade of Chikmagalur (950-1400+ MASL). Canopy shade filters solar radiation, forcing coffee plants to slow their growth cycle. This prolonged maturation period optimizes sugar accumulation, yielding dense, organic-acid-rich seeds.

2. Roasting Kinetics

Roasting is a delicate thermodynamic curve. We manage the **Maillard Reaction** and **Caramelization** to convert complex starches into aromatic compounds (pyrazines, furans). Small batches ensure heat transfers uniformly, avoiding surface scorching or inner under-development.

3. Off-Gassing & Rest

During roasting, carbon dioxide builds up within the bean matrix. This gas creates high resistance to extraction during brewing, leading to uneven wetting and sour flavors. We enforce resting times (5-7 days for filter, 10-14 days for espresso) to achieve stable extraction geometry.

The Chemical Signature of Terroir

Lipids & Sugars

Arabica beans grown in deep shade accumulate up to 60% more lipids and sucrose than standard varieties. During roasting, these sugars caramelize into rich furans, while lipids coat the tongue, yielding a silky, chocolatey mouthfeel.

Organic Acids

Maturation temperature controls malic, citric, and phosphoric acids. High-altitude cooling preserves these acids, giving our single-origin pour-overs their bright, sparkling, apple-like and citric complexity.

Caffeine Density

Robusta plants naturally produce twice the caffeine density of Arabica. Caffeine acts as a bitter alkaloid pesticide, and its density adds a strong sensory kick and contributes to a robust, viscous crema.

Chicory Synergy

Chicory contains inulin, a soluble dietary fiber. When roasted, inulin caramelizes into sweet, malty compounds. In South Indian Filter blends, chicory acts as a natural thickener, lowering bitterness while holding up to milk proteins.
