You’ve seen these terms on our bags: Natural, Washed, Honey Sun Dried. They aren’t just buzzwords; they are the single biggest factor affecting the flavor of your coffee, second only to the bean variety itself. Processing is the method of removing the coffee fruit (cherry) from the seed (bean) inside.
1. Washed Process (The Purist)
The Method: Also known as "Wet Processing". The coffee cherries are de-pulped (skin removed) immediately after harvest. They are then fermented in water tanks for 18-36 hours to break down the sticky mucilage clinging to the parchment. Finally, they are washed clean with water and dried on raised beds.
The Flavor: Clean, crisp, and high-acidity. Because the fruit is removed early, you taste the seed itself. This method highlights the intrinsic character of the origin and terroir. If a coffee claims notes of "Jasmine," "Lemon," or "Earl Grey," it’s likely washed.
2. Natural Process (The Fruit Bomb)
The Method: The oldest method in the world. The whole coffee cherry—skin, pulp, and seed—is laid out to dry in the sun on raised beds or brick patios. They are turned regularly for uniform drying, which can take up to 4 weeks. The fruit ferments slightly around the bean, imparting its sugars and flavors into the seed.
The Flavor: Big, bold, and jammy. Expect heavy body, lower acidity, and intense sweetness. Notes often include strawberry, blueberry, jackfruit, or even wine. It’s a polarizing profile: you either love the funky fruitiness or find it too overwhelming.
3. Honey Sun Dried (The Sweet Middle Ground)
The Method: A hybrid of the two. The skin is removed (like Washed), but the sticky, sugary mucilage is left on the bean to dry (like Natural). The amount of mucilage left determines the "color" of the honey process:
- White/Yellow Honey: Less mucilage, faster drying. Closer to Washed.
- Red Honey: More mucilage, slower drying. Sweet and syrupy.
- Black Honey: Most mucilage, very slow drying in shade. Intense complexity.
The Flavor: The best of both worlds. You get the creamy mouthfeel and sweetness of a Natural, but with the distinct clarity and acidity of a Washed coffee. It is rarely "honey" flavored; the name comes from the sticky texture of the drying beans.
Summary
- Drink Washed if you like tea-like body, floral aromas, and bright citrus.
- Drink Natural if you like fruit punch, heavy body, and dessert-like sweetness.
- Drink Honey if you want a balanced, complex cup with a syrupy mouthfeel.
